I've tried some different recipes for french toast, but all were too much fatty, but finally I've found a good one!
Ricotta french toast:
1 whole egg
1 tablespoon of milk
1/4 teaspoon of cinnamon
1 teaspoon of honey
2 slices whole wheat bread
1 tablespoon of ricotta cheese
1/2 cup of blackberries (usually I use blueberries)
1 tablespoon of sugar
marple syrup

In a bowl whisk together the egg, milk, cinnamon and honey.
Carefully dip each slice of the bread into the egg/milk mixture, letting slices soak up mixture for a few seconds, then carefully turn to coat the other side.
Now you can cook them in the oven, preheat at 180°/190° for 12 minutes until crisp or, and this is what I prefer, you can put them on a cooking grate, I'm in love with the Ballarini's grate... and cook both sides.
Mmmmmmmm. Although I'm not entirely sure about the ricotta :-)

You can't tasted the ricotta, but you can try also without.
